So you got 2 weeks to cram as much gourmet food knowledge into your head as possible. Week 1’s test dish…Chicken Breast with Sweet Sherry Sauce with Mushroom Risotto and Grilled Eggplant Wrapped Asparagus.
This dish is inspired by Chicken Marsala, but with Fine Old Canadian Sherry in lieu of Marsala. Some mushrooms and onions poached along with some chicken breast. The risotto features an award winning Chateau des Charmes Sauvignon Blanc and sweet basil also with mushroom and onion. The grilled veggies are glazed in an asian inspired maple syrup glaze.
I was trying to get this done in 45 minutes but it took me 1 hour…
