So You Wanna: Be a MasterChef

So you probably talk a lot of smack when you watch MasterChef. I mean really, you’ve probably been to all the hottest fine dining restaurants in the course of your business dealings. Maybe you’re even a real foodie. Even if you turn your nose up at the Foie Gras and order the inevitable steak you’ve still seen enough to know that cuisine is about composition and presentation, it becomes an art form with food as its medium, on a canvass of plating. So you put your money where your mouth is and hit the MasterChef Canada Auditions. If you’ve got half a day or so to spend on preparing one dish this is what you do.

Quebecois Inspired Soupe Aux Pois with Maple Glazed Canadian Bacon.

Ingredients – Stock

  • Carrots, Halved
  • Celery, Ends Removed, Leaves Reserved
  • Onion, Halved
  • Chicken Giblets, Liver Removed
  • Chicken Wing Tips
  • Chicken Fat
  • Fresh Bay Leaf, Whole
  • Fresh Parsley, Whole

Ingredients – Bacon

  • Pea-meal Bacon, Whole
  • Maple Syrup, Canada Medium Grade
  • Fresh Coarse Ground Dijon Mustard with VQA Sauvingnon Blanc
  • Fresh Rosemary, Stem Removed
  • Fresh Coarse Ground Black Pepper
  • Kosher Salt, Crushed

Ingredients – Soup

  • Dried Yellow Split Peas, Rinsed
  • Carrots, Half-dollared
  • Celery, Sliced
  • Onion, Chopped Fine
  • Garlic, Minced
  • Fresh Spinach, Blanched, Sauteed in Lemon Juice, Garlic, & Olive Oil
  • Fresh Bay Leaves, Whole
  • Fresh Tarragon Leaves, Chopped
  • Hulled Hemp Seed, Cracked

Ingredients – Toasts

  • Fresh Baguette, Sliced
  • Garlic, Halved, Rubbed
  • Fresh Rosemary, Chopped fine
  • Fresh Basil, Chopped fine
  • Fresh Ground Black Pepper
  • Fresh Ground Red Pepper Flakes
  • Butter, Unsalted
  • Olive Oil, Extra Virgin

Ingredients – Garnish

  • Hulled Hemp Seed, Sprinkled
  • Fresh Bay Leaf, Whole
  • Fresh Parsley, Whole
  • Fresh Tarragon, Whole

I am not going to tell you the entire process, the ingredients should be enough if you know how to cook. Gotta protect some trade secrets.

p.s. The dish got me past the taste test round. keep your fingers crossed and tune in to MasterChef Canada on CTV this winter and maybe even catch a glimpse of the man himself.
